When you think about Chicago Deep Dish Pizza, there is only one thing that comes to mind. Deep Dish, right? Sochaczew Chicago is the home of Deep Dish. The pizza was invented there. Nobody makes deep dish pizza like the famous pizzerias in Chicago.

Think Lou Malnati’s, Pizzeria Duo, Pizzeria UnoGino’s East, for Chicago Deep Dish Pizza. The list goes on and on. Thrillist, after some extensive research, created a list of THE BEST CHICAGO DEEP-DISH PIZZA PLACES. I won’t argue the point. I’m sure each place mentioned creates stellar Chicago style pies.

The fact is there are many great Chicago pizzerias that create other types of pizza. Jonathan Goldsmith’s award-winning pizzeria Spacca Napoli is but one example. Panino’s owned and operated by Gino and Lenny Rago with cousin Bruno make multiple styles of pizza. Of course, Paulie Gee’s at Logan Square makes great pizza as well.

But I always thought of Chicago as basically a Chicago Deep Dish Pizza town. I was able to get the real inside scoop on Chicago Pizza from Jonathan Porter of Chicago Pizza Tours. Jonathan has been giving pizza tours for a number of years. He is the ultimate expert on pizza in the windy city.

Early on in our conversation, Jonathan revealed:

“only 15% of the pizza in Chicago is Chicago Deep Dish Pizza!”

What? Only 15%? This was incredible to me. Although I knew there were other types of pizza, I thought Chicago Deep dish dominated the Chicago Pizza scene.

He said a lot of the pizza is a tavern style pizza. This is a very thin crust type pizza. This type of pizza was invented as a way to get bar patrons to eat and drink more. The logic was if you give away pizza you will get your customers to want to stay in the bar for longer periods of time. Jonathan explains this tavern style pizza is the basis for pizza there.

There has been an influx of other styles as well: coal-fired, artisanal pizza, Neapolitan pizza, Quad City style, and even New Haven style pizza can be found there. you can discover quite a bit of variety. There are over 2,000 pizzerias in the Chicago area and only 2-300 hundred pizzerias make the Deep Dish. The bulk of the pizzerias make the tavern style thin crust.
