Chris Bianco is a Pizza Maker who lives in Phoenix. He creates incredible pizza at Pizzeria Bianco his pizzeria. His pizza has been celebrated and discussed by some of the most respectable pizza makers in the industry. He has been the subject of numerous books including Peter Reinhart’s incredible volume: American Pie: My Search for the Perfect Pizza. He has also been discussed at length in Ed Levine’s classic Pizza Manifesto: Pizza: A Slice of Heaven: The Ultimate Pizza Guide and Companion

He has been featured on Oprah Winfrey and interviewed by Gayle King. When I discussed his appearance on Oprah with him he was unfazed and humble. When I had heard about his appearance on Oprah, I was amazed and I told him. “I make pizza, Albert” he stated to me simply.
In our conversation he was extremely forthcoming and willing to share his extensive pizza knowledge.
He was recently interviewed by the Robb Report. He was asked to share his scret for the perfect pizza. There is no secret, he explains. You are the one who decides what is the perfect pizza.

Jimmy Kimmel is a huge pizza fan. He appreciates wonderful pizza. He has had Bianco’s pizza and loves it. He had Chris come on his show to demonstrate how to make pizza. You can actually watch Jimmy Kimmel and Chris Bianco make a pizza in the video posted below.
What I like most about this video is the simplicity which Chris makes his pizza. Yes it is created in a wood fired oven. Yes the pizza cooks in less than two minutes. But the primary ingredients on this pizza are tomatoes and mozzarella. And the Most Secret Ingredient of All: Chris Bianco!

You bring up an interesting point.
Even those who are familiar with New Haven pizza would argue: Is it Pepe’s, Sally’s or Modern.
And of course Zuppardi’s makes excellent pizza!
In some recent polls the Pepe’s White clam (my personal favorite) has been ranked as the best pizza in the country.
I say: you decide who makes the best pizza….
As in sports, everyone has a favorite team…
So I say: you decide who makes the best pizza.

In my mind, I always want the pizza I’m eating (or making) to be the best pizza I’ve ever had. In reality, it may just be- until I have the next pizza!
My own pizza, well.. thats another story, I still have a lot to learn!

Thanks so much for your comments Jerry. There are some pizzas that you just can’t get enough of…Sometimes when I make a pizza it is quite good, other times not bad but not as good as it could be. I don’t think you always hit a homerun when you make pizza…but sometimes you do! I feel I still have a lot to work on myself.
Every time I make pizza it gets a little bit better…I’m sure your pizzas will get better and better as well! pizza on earth, and especially, your kitchen!
I love hearing about small pizza shops that sprout up all over the United States! Although Bianco has owned his pizzeria for a while now, I’d like to know if he is planning on expanding as a business at all past the three locations that are already in circulation. Heck, if it’s the best pizza in the U.S. it’d be great if there was at least one location in every state! I’d love to try it out, and if I have to fly to Phoenix to check it out, I just might! I have spoken to Chris Bianco about this very point. At the time he was not interested in franchising Bianco’s Pizzeria. I don’t think at this time he is interested…. But who knows?
