” Never trust a round pizza” so states Chef Todd English, in his book The Figs Table. He was referring to many of the great pizzas he has has over the years most notably at Pepe’s, in New Haven.
Honestly few of my pizzas ever come out perfectly round. Not the this affects the taste mind you, but they just don’t come out perfectly round.
Enter our friend Chef Phillip Bruno of Scoozi’s, voted Number 1 Pizzeria in Melbourne 2014.
He has come up with a fool proof method to make a round pizza, every time. The method employs using a bowl as a form for the pizza. I have used a conventional pizza pan as a round pizza template, and while it has worked out OK, I think Chef Phillip’s method is simply incredible!
Basically you take a round bowl dusted with flour. Take your dough all and genly stretch it over the top of the bowl. You need to work the flour and keep on stretching. After a bit it all comes together and you have a perfectly round pizza!
Try this out and let me know what you think!
I have included the pictures as well as a video slide show.
Here is the slide show video that will show you all of the steps:
Thank you Chef Phillip Bruno!

Here is Todd’s great book:
Get recipe for pizza dough. Now just need a good recipe for the sauce. Have tried several and don’t care for any of them. They seem to all taste bland or too oregano tasting. I tried to fix myself but no luck. Any ideas?
For sauce I just use whole canned tomatoes. San Marzano Tomatoes work great but any canned tomato will work. Flavor with fresh minced garlic, basil and any other spices you like.
I do have a sauce recipe you can check out, I give you my sauce / gravy recipe. There is also a step by step video I did at the bottom of the page.
