Dom DeMarco Making Pizza at Di Fara’s Pizza

    One of the most amazing experiences I have had was to visit Brooklyn with the express purpose of going to Di Fara’s Pizza experiencing Dom DeMarco in action. I was very curious to know why his pizza is legendary. Was the pizza as good as I had heard or was this just ordinary every day pizza.

    We wanted to get there early as I had heard that there was a long line. We arrived an hour and a half before Di Fara’s opened. A line had already started to form. We were early enough to be 6th in line. The line reminded me very much of the line at Pepe’s in New Haven. The other pizza fans in line were very pleasant and willing to discuss pizza and what the thought of Dom. The pizza was unique and wonderful they explained. I knew I would not be disappointed.

    Within minutes the length of the line got longer and longer. And I felt relieved to know we would be getting pizza soon as the pizzeria opened. The plan was to try the different types of pies offered. There was the famous round pies but also we were told to try the square pie for a totslly different taste.

    As we snaked to the front we were greeted by this sign:

    The decision was made for us..we would only be ordering round pies.

    We watched with anticipation as Dom and his son did all the things needed to open.

    Finally the doors opened and we were ready to order our pizza. It was amazing to see Dom at work. He was patient and meticulous with each step of the process. He had a sure hand. He did not talk much but just kept working at making pizza. Pizza after pizza. Each one by hand. I noticed he would create the pizza and use a peel to put the pizza in the oven. Then he would use his bare hands to move the pizzas around. I also nticed he was able to take the pizza out of the oven with his bare hands.

    Finally our order came out. We had ordered a whole pizza hoping that would be enough. It was.

    The pizza in a word was simply amazing. The crust was thin thin, with flavors that complimented each other well. Dom created each pizza and when it was finished he would take a pair of scissors and cut fresh basil on each pizza.

    I was astounded with the taste of each slice. This was arguably some of the best pizza I have ever tasted.

      Looks great! But When I make pizza, I won’t let anyone call it “plain”! They are to refer to it as “cheese” pizza!
