One of Jon F.’s signature pizzas is the pesto pizza.
Pesto can be used with a number of dishes. You can have it on pasta, or smear it on bread.
Pesto
2 Cups Basil Leaves
1/4 Cup Pine Nuts
1/4 Cup Olive Oil
1/4 Cup Parmesan Cheese
2-3 Cloves of garlic
You can watch a step by step demonstration of how to make Pesto at this link.
For this pesto pizza, Jon reserves the pine nuts from the pesto itself and puts the m on at he end of the process. The pesto is not cooked with the pizza but is rather added after the pizza the pizza is finished.
Jon uses a 2 cheese mixture of Mozzarella and Italian imported Fontina cheese. He cooks this in the oven at 550 F (260 C) on a preheated pizza stone. The baking time is 7 minutes. The pizza stone has been preheated for at least an hour.
After the pizza comes out, Jon spreads the pesto on top of the pizza. Pesto is a mixture of basil, olive oil, Parmesan cheese and garlic.
He finishes the pizza with a generous sprinkling of Parmesan cheese.
This pizza tasted every bit as good as it looks!
