Notes pizzaiolo and good friend< Jon F. shares his whole wheat pizza dough recipe. Note that it is actually a mixture of half whole wheat flour and unbleached white flour. Jon always recommendsKing Arthur Flour – All Purpose Unbleached, 5-Pounds (Pack of 2)
An interesting side note is the procedure which Jon uses to construct his cheese pizza. He starts with mozzarella cheese as the base and he builds up from there. Next he puts on his tomato sauce which is basically canned stewed tomatoes. He uses Pecorino Romano cheese on top. He uses no spices whatsoever on this pizza. No basil, no salt and no pepper. Totally naked pizza!
Here is Jon’s Basic Dough Recipe:
Jon F’s Whole Wheat Pizza Dough
Ingredients:
– 3/4 cup King Arthur whole wheat flour or equivalent
– 3/4 cup King Arthur Unbleached white flour or equivalent
– 1/2 teaspoon salt
– 1/8 teaspoon yeast
– 2/3 cup iced water
Directions
1) Mix all ingredients in a Kitchenaid mixer until blended
2) Knead mixture on floured board for a few minutes.
3) Put in oiled bowl and cover with plastic wrap before putting in refrigerator for and 18 to 24 hour cold fermentation.
4) Take out about one half hour before using
