"Went to your Italian Recipe section  and found no Putanesca. I
have a recipe from Faulise that is killer ( I added one ingredient, and
I' ll deal with Faulise about copyrights. Ha,ha.) and you can have it."

Thanks, Irv!!! You do know, however, you can't copyright a recipe! (I think...)

Ingredients:

  • 1/2 cup olive oil
  • 8-12 anchovies chopped fine (depending on taste).
  • 8 garlic cloves minced
  • 1 cup sliced black calamata olives (regular black may have to do)
  • 1/4 teaspoon crushed red pepper flakes
  • 3 tablespoons capers rinsed
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon oregano
  • 2- 28 oz. cans whole peeled tomatoes
  • 1 green pepper sliced (optional)
  • pasta - small or medium linguine is my choice

Directions:

  1. Heat oil on low and sauté everything but tomatoes and green pepper for 5-10 minutes.
  2. Drain, crush and slice tomatoes and add to pot with salt and pepper to taste. Reserve liquid from 1 can.
  3. Add the liquid of one tomato can. The juice of both cans make the sauce too soupy.
  4. Bring to simmer uncovered 30 minutes. The optional green
    pepper can be added anytime depending on how crunchy you like your pepper.
  5. Buon appetite.
