Hello-
I’m writing to let you know
that a link to your website has been included in a resource list we
have compiled for our Topic page on
Pizza. These lists are compiled by reporters, editors and researchers here
at the Times, with some suggestions from outside experts.
I am writing to suggest that
you include a link to the page on your site. We think the pages can
be a great source of authoritative online information for readers
and researchers. And to be candid, we want to see the effect on
search rank of adding what are called “external links,’’ which are a
particularly powerful factor in search algorithms.
I’d also be glad to hear any
suggestions you might have for additional resources on this page.
Best,

Gail C. Wins the Ultimate Recipe Challenge

Gail C. and Guy Fieri of The Food Network |
I never doubted it for a second!
Our own Gail J. Churinetz, a long time member of the
Pizza Therapy Family won the The Ultimate Recipe Challenge
on The Food Network.
A huge congratulations goes out to Gail and her family.
Gail has been a dedicated foodie and pizza fanatic for many years. As a
matter of fact I still have a bunch of her recipes on a CD she made for
me a number of years ago.
As an aside, Gail is such a pizza purist, she has all of the water she
uses for he pizzas, imported straight from New Haven!
And as I understand it, The Water for her award winning pizza, came
right from the tap at
Sally's Apizza on Wooster Street. The award winning pizza: a Crawfish and Andouille
Sausage Pizza.
Gail's recipe was up against some very stiff competition. In the end,
her recipe won over the judges.

While, I do not have permission to share her pizza recipe, you can get
copy of the recipe
at this link.

4) Fernando From Brazil Asks:
I
love Pizza Therapy. I've been making pizza for the last 15
years, but I 've never been satisfied with the result, thanks to
pizzatherapy I am learning again. I used to make the pizza dough
with a recipe similar to yours, more olive oil, all the water in
the yeast mixture, no sugar in the yeast mixture. This weekend i
will use your recipe step by step
I have some questions for You
1) My pizza never gets crispy!!!!!
2) How much yeast in grams? Here in Buenos Aires the package is
10 grams. (is it
enough for 4 coups of flour?)
3) A good recipe for a good tomato sauce for pizza? (I use olive
oil, garlic, salt and
canned tomato)
Next week I'll send you a picture!!!
My
Response:
Thanks for writing Fernando.
1)
To make your pizza crispy, first make sure you pre-heat your
oven for an hour to 500+ F. (260+ C.) Make sure your oven is
HOT, HOT, HOT!
2)
For yeast: if you make your dough the day before 1 to 2
teaspoons of yeast should be enough.
3)
For me, I usually use stewed tomatoes for my pizza. I smoosh
them down with a fork, and put them on the pizza.
I do
have a red sauce you can use. There is also a video. Here is the
link:
Basic Red Sauce / Gravy
I
can't wait for your pictures!
