1) I wanted to wish you a very Happy New Year! Be Stay well, Stay well and laugh often. This past year has been an amazing one, here at Pizza Therapy. As I started to look back, I realized all of the amazing pizza adventures I have had during the past year. I made some incredible pizza. I ate incredible pizza. I made new friends and reconnected with old one's. I am eternally grateful for my family and my friends. And I want to thank you for being a part of the Pizza Therapy family. This past year included a number of outstanding pizza tales. Here are some of the highlights:

2) Mozzarella di Buffala: The King of Mozzarella!
Buffalo Mozzarella (Mozzarella di Buffala) is made from buffalo milk and is very different from commercial mozzarella. Buffalo Mozzarella is shaped into a ball and is packed in a brine mixture rather than wrapped in plastic. Fresh cows milk mozzarella is similar to Buffalo Mozzarella and is also packed in brine.
