1. What's New? Eggplant Parmesan Pizza

Bean, is a very active member at the Pizza Therapy Forum. She has shared her vast knowledge as well as numerous pizza and other recipes. Her latest, is an incredible Eggplant Parmesan Pizza. This pizza looked so amazing, I had to share it with you.

Here is the recipe:

This was excellent! I used eggplants from my garden, made a red wine pizza sauce and a old pizza dough recipe. Topped it with red jalapenos and purple basil from my AreoGarden. This is very filling, I could only eat one piece. This is going to be a new favorite here. Smile

Eggplant Parmesan Pizza

2 thin eggplants, peeled and sliced thin
2 egg whites, lightly beaten with 2 T. olive oil
1 cup seasoned dry bread crumbs
1 recipe for homemade dough (your choice)
1 cup pasta sauce
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated

*Olive oil & garlic powder mixed for brushing the pizza dough before baking (if desired).


Preheat oven to 375. Line a large baking sheet with foil and spray with Pam.
Dip eggplant slices into egg white/olive oil mixture, then breadcrumbs. Place on prepared baking sheet, single layer. Bake 15 minutes, turn slices over and bake 10 minutes longer or until browned on both sides. Remove from oven and set aside. Increase oven to 500.
Brush the dough with olive oil/garlic powder (if desired) then top with pasta sauce, eggplant, and cheeses. Bake on pizza stone with a bit of cornmeal 10-15 minutes.

2. Pepe's Expands to Manchester, Connecticut

I heard from my friend Gary Bimonte, the other day. He excitedly told me about Pepe's  newest addition. Pepe's opened another pizzeria in Manchester, Connecticut.

After 80 years in the same location, on Wooster Street in New Haven, Pepe's is now in Fairfield, and Manchester.

We discussed some of the new directions Pepe's would be taking in the Legends of Pizza, Volume 1

During our discussions for  Legends of Pizza, Volume 1, he explained the reason behind the expansion. I also asked him if I could expect Pepe's in Hawaii, anytime soon.

He told me: "That would be a beautiful thing!"

3. Bruce's Pizza Dream

Bruce wanted to share the following with the
Pizza Therapy family:

"I am almost finished with my pizza oven
that I constructed in my backyard, looking forward to cranking it up in a few days to cure the brick.

Now that's some oven Bruce! You can get some tips about cooking in a wood fired pizza oven at the Pizza Forum as well as the Forno Bravo Forum. 
One of my favorite threads is called Brick Oven Photos.  The photos are truly incredible.

While poking around the Forno Bravo website, I found a great blog called:

4. A Visit to Libby's Italian Pastry Shop

Anytime you visit Wooster Street in New Haven, you need to check out Libby's Italian Pastry Shop.

It's actually mandatory that you stop in for a gelato or Italian Ice.

The last time I was there I got to visit with May, daughter of the original owners.
We had a great conversation. She even revealed that her father and Frank Pepe were best of friends...
