1. Pizza: The Movie

We are pleased to get you excited about the upcoming documentary  "Pizza"   (http://www.catprice.com/) by filmmakers Michael Dorian and Joe dos Santos. This an ambitious project of epic proportions covering three phases of pizza.

The plan is to focus on the Pizza Industry by profiling pizza industry executives and entrepreneurs which would include pizza parlors from various locations in the United States and Italy. Next "Pizza" will look at The History of Pizza with segments on the history of pizza in New York and Chicago (including landmark places like Patsy’s, Lombardi's, and Grimaldi's in NY and Pizzeria Uno and Gino’s East in Chicago). Finally, the film will shoot footage of individuals involved in planning and coordinating the various pizza shows and expos coming up this year and in 2005. In addition, the film will document the trials for the US Pizza Team and follow it to Italy for the World Pizza Championship in early 2005.

We had to ask Michael Dorian if he had contacted our friend Gary Bimonte, co-owner of Pepe's. We also thought other good resources would be our favorite baker, Peter Reinhart, author of American Pie  (http://www.pizzatherapy.com/ameripie.htm) as well as Flo Consiglio, Sally's wife.

Michael responded:

"We did interview Gary B. a couple of weeks ago. Great guy. Great pizza. Absolutely. And we met Peter Reinhart back in July in Charlotte, NC. We really hit it off with him and he'll surely be all over our film. We're still in touch with him about the project. Flo's on our list, too; we'll get there."

These guys  have certainly done their homework!

2. Pizza Pizza: The Song

Every once in a while you hear a song that strikes a chord in your heart (or stomach)!

Pizza Pizza is such a song! 

It was written and performed by Joe Dolce and became a minor hit in Australia in the 80's. 


The time has come to revive this incredible song and get people singing and dancing while eating more pizza!

Jonathan Edwards and I formed a very popular local band when we were in college together at Ohio University in the late 60s called 'The Headstone Circus'. We both went in different directions with our later solo careers, he had a hit with 'Sunshine' and I had a huge international hit with 'Shaddap You Face' (15 countries - 35 foreign language versions) which has held the title as the biggest selling Australian single recording in history, now for 25 years straight."

" In the last two years, it has started getting some major attention in the US, thanks to the efforts of my brother, Frank Dolce, who has worked it like a pizza mule, and to Steve Green, CEO of Pizza Marketing Quarterly (www.pmq.com) who has been instrumental in placing it as the theme song for the US Pizza Team, in competition in Italy, and getting 'Pizza Pizza' on ESPN 2's National morning TV program 'Cold Pizza' five times!"

3. Pizza Assistance for An Irish Pizza Fan

Albert please help

I have found your site so interesting, very good of you to share all this information with the world. If you have time could you please walk me through your version of a basic Margherita taking into consideration I am in Ireland and several ingredients are known by different names, for example I can't find anything here called cornmeal.

Our Response:

Thanks for writing Sean. There are countless variations of the Margherita. Choose one that you like. Our Basic Recipe for the Margherita follows. 

Although corn meal is not an essential pizza ingredient, I like the taste of it on the bottom of my pizza. I use it primarily to allow the pizza to slide in and out of the oven. If you are using a flat pizza pan you can spread it on the pan before you put in the pizza dough with the same result.

You can just as easily use flour so your pizza won't stick, but I love the taste of cornmeal. 

As Cousin Ronnie used to say: "Cornmeal is the little ball bearing of pizza!"

 

4. The Margherita by pizzatherapy.com

Here you go Sean, we hope this helps!

This legendary pizza is simple and elegant!

"Raffaele Esposito, created this pizza to honor Queen Margherita's visit to Naples in 1889. He created a special pizza which resembled the Italian flag. The pizza consisted of basil (green), mozzarella (white), and tomatoes (red). This dish sets the standard for our modern day pizza. This patriotic pizza was an instant success with the King and Queen, as well as his other patrons. He named this pizza in honor of the Queen, the Margherita."

The taste of this dish is superb if you use buffalo mozzarella. 
If not available, any whole milk or regular mozzarella will do!

Ingredients:

  • Dough for 1 pizza 

  • 4-6 oz. of buffalo mozzarella (whole milk mozzarella is fine)

  • 2-3 cloves of garlic minced

  • 2-4 oz . of parmesan

  • 2-4 Plum tomatoes, sliced thinly

  • ¼ cup fresh basil (if available)

  • salt and pepper to taste

Directions:

  1. Roll out dough to desired size.

  2. Drizzle olive oil on dough. Spread evenly. 

  3. Mince garlic and spread on dough.

  4. Slice mozzarella and spread over dough

  5. Spread the parmesan on the pizza

  6. Evenly spread the tomatoes on the pizza

  7. Bake at 500 degrees for 8 to 10 minutes
    (preferably on a preheated Pizza stone & peel set. Stone should be preheated for 1 hour.)

  8. After pizza is cooked, tear basil leaves and put on cooked pizza. Add other spices to taste.

 

Tips

  • Use buffalo or whole milk mozzarella. Regular mozzarella will work. 
    But the buffalo mootz, (as they say in New Haven), will be fantastic!

  • You can substitute ¼-½ cup of Tomato sauce for fresh tomatoes or use both!

  • Use fresh basil if available but dried will work.
