2. Juggling Pizza: How to Toss Pizza

TakeFiveFilms creates wonderful how-to-films. They have films on a wide range of topics.

My favorite is their "How to Toss A Great Pizza". You can find it at this link: http://www.takefivefilms.com/how_to_videos.html

When you get to the page scroll down through the "how-to-baby-films" until you reach number 11.

Look for "How to Toss A Great Pizza".

TakeFiveFilms will tell you on their website, these films are not meant to be comprehensive "how-to's" but rather overviews. The pizza toss film is short, just over four minutes. You do see an actual "how-to" toss a pizza.

I think this film is a great practice film for anyone who wants to learn how to toss. Now, you should realize, this is just one method of tossing. There are other techniques.

On their website is the following FAQ:

3. Juggling, Juggling: Two Videos You Need to See!
 

I have a couple of videos for you to watch. You will be amazed.
They are so incredible...you will forward the link....

No, these are not about pizza, but they are very interesting.

The first video is Chris Bliss juggler/comedian who is very good.
He is poetry in motion.

The second video is juggler Jason Garfield, who is better than the first..., (but is he really?)
Chris juggles with three balls, Jason tries to one up him, by doing the same routine with five balls...


These videos will amaze you. They will entertain you. (And you get to listen to The Beatles...)

3. The Big Green Pizza Truck Part 3:

I kept hearing stories, about the big green pizza truck, a mobile pizzeria, with a full on, wood fired pizza oven, in the back. I knew I had to track down the truck and owner . I finally found Douglas Coffin, through a post he made in a pizza forum. He not only agreed to do the interview but he was very forthcoming about the Pizza Business and his pizza truck.

The Big Green Pizza Truck Poster!

Albert What is your favorite pizzeria? (OK OK that is a loaded
question, but other than your own, whose pizza do you like?)
 

Douglas: Someone asked a football player what teams they liked to watch
on TV. He said, would a guy who worked on an assembly line at GM want to
watch a film of the guys on the assembly line at ford?

Why would I go out for pizza? If I have a night off, I go out
to the movies. Before I go out I make myself a peanut butter and raisin sandwiches.


Albert:
 How far does the pizza truck roam? Do you just do the tri-
state area (Connecticut, New York and New Jersey) or do you travel up
and down the East Coast?


Douglas:
The truck has a top speed of 53 which it struggles to maintain
up a grade. It also has a non synchromesh transmission so shifting is an
acquired skill. There is 345 air conditioning - three window open at 45 miles
an hour (the front cranks out), so long drives in the heat are unpleasant.
For these reasons the true answer to how far will you drive is "as little
as possible". The for publication answer is "within the state of Connecticut."

Albert:  Can you share some pizza tricks and tips for our readers?

Douglas: To the beginners I would say consider your first 100 pies
as practice. Stretching and handling dough is something that you
have to do a lot to get the feel of it. I must say that I have been amazed
at how good the Mugnaini oven is.

Albert side bar: "This is the exact same advice, Chris Bianco gives in "Legends of Pizza". Chris says repetition is the key!"

For the dedicated enthusiast who has
money to spend on their hobby, I would suggest checking out one of their
smaller, home sized ovens, especially if you live somewhere where outdoor
entertaining is possible in many months. They are not great for the come
home through something in the oven cook - they take hours to heat up and
stay hot for hours.

But for those who love to have a crowd over and like the
casual style it offers you'll really like the results this oven produces. For
some, the search for the perfect pizza is a mystical quest. Realize then
that it is all about the quest, not the prize, because lets face it, when
you find the perfect pie you'll eat it, the quest will be over
and you will still have many more years to live.

 

 



Albert:  Have you been approached about franchising. I'd love to
get my hands on one of those babies for where I live...

Douglas: I have thought about franchising, but I think I'm more
inclined to build trucks for sale or lease to others. Many people could use the
trucks but don't want to wear green shirts and yellow suspenders.

Also, some of the expectations for income from franchises seem to be rather high -
one guy said he would want to see a 25% return on capital investment
plus an income of $60-75,000 per year.

If I could do that at this point I would be very happy and not worry about
starting a lot of franchises. At this point I have not gotten the system down
for making these trucks quickly and within a specific budget. they will not be cheap -
I imagine a price for them as is would be around $100,000. I would be happy to
discuss building them with anyone who is thinking about it.
