My phone call with
Chris Bianco The phone rang a few days before Christmas. I said, "Hello". "Albert, this is Chris Bianco." "Hey Chris, how are you doing?" "Fine, fine. I just wanted to say, thanks Albert. I appreciate all of the work you are doing. I liked the way Legends of Pizza turned out". I was humbled. Here is one of the finest pizzaiolo in the country, calling me up to say "thanks". Chris as usual was easy
to talk with. I had to ask him about his recent appearance on Oprah. I can't remember his exact words, but basically, he told me it was no big deal. Hey, if I ever show up on Oprah, I may give you my autograph. Maybe. But not Chris Bianco. Chris Bianco is one of the most modest people on the planet. It doesn't matter to him that he was featured on the most popular television show in the World. It really does not, matter. He just wants to do what he does best, make pizza. He is a true pizzaiolo, a role model and wonderful person. We had an amazing conversation. He shared more of his pizza philosophy with me. Thank you Chris. I am honored and again, humbled. Lunch with Tony Gemignani I have been in regular contact with Tony Gemignani for the past year. He had told me he would be in Hawaii over Christmas, vacationing on Maui. He said he had some business on Oahu, where I live. I offered to take him to lunch. He said he would be delighted. Charlene, Kamalei and I picked up Tony and his wife, Julie at the airport. We headed up to the Pali look out for some views of the windward side of the island. My plan was to take him and Julie, to one of our favorite lunch spots. I thought we could go for Chinese food (Dim Sum), sushi or maybe one of the finer ethnic dining spots. He was open to any suggestion. Charlene asked: "Where do you really want to go, Tony?"
Before you could say pepperoni, we were headed
to my favorite Hawaii pizza joint: You can't go out to lunch with Tony Gemignani without discussing pizza. This was some of the most in depth pizza conversations I have ever had. I refer to Tony as The Ambassador of Pizza in Legends of Pizza, Volume 2. He lived up to his nick-name. He is also incredibly humble. Tony is a fantastic person. He has traveled the World, learning as well as teaching about pizza. Needless to say, I was in pizza heaven! I can't thank you enough, Tony! 4. The Latest on Brian Spangler I had been trying to contact Brian Spangler since the release of Legends of Pizza, Volume 2. I wanted his opinion of the interviews. I was able to have a conversation with him last week. He has been doing well. He liked Legends of Pizza, Volume 2. but he has been incredible busy. He is expanding his restaurant Apizza Scholls. I asked him if this means he will be making more pizzas. Will this mean a busier restaurant with more dough being made? Not at all, he explained. "I just want to take care of the customers we have". Brian is another true pizzaiolo. He has heart. He is dedicated to his craft of making pizza. Nothing more, nothing less. You can see Brian on the January 22, 2007, episode of The
