One of the most under used methods of serving garlic is by roasting it. The process of roasting garlic in the oven totally changes the taste of garlic. The taste is much more mellow, without the bite.

Once cooked in the oven, the garlic comes out like a kind of paste. You can easily spread it on bread. You can use it in soups and pasta.  You can spread it on pizza. And using roasted garlic will take your garlic mashed potatoes to new heights.

1) Cut off the tops of garlic bulb
2) Drizzle olive oil on top
3) Wrap in foil
4) Cook in 400 F (204 C) Oven for 40 to 60 minutes.
