2. Questions: We Have Your Answers

Remember Paul?

In a previous issue of Pizza News, Paul said: Can you ask your readers if they know of a good pizza tomato
sauce recipe? Something delicate, yet flavorful?

Vince answers:

Hi Albert and Pizza News readers,

Sauce is what you make it, smooth and heavy to light and airy.
Albert likesa traditional simple chunky sauce, probably more authentic than
our American versions. I prefer the smooth, slightly seasoned sauce below;



Smooth Pizza sauce for 3-4 pizzas

1 small can tomato paste, find a good one
6oz water
3 tablespoons parmesan cheese, grated
1 teaspoon garlic, minced
2 tablespoons honey
1 teaspoon anchovy paste,
1/4 teaspoon oregano
1/4 teaspoon basil leaf
1/4 teaspoon ground pepper
1/8 teaspoon cayenne pepper
 salt to taste

Combine all ingredients and let sit for 30 minutes before using.
Refrigerate up to 2 weeks.

In a previous issue of Pizza News, Jeff  from Hamilton/Toronto, said: Can I blend corn meal with the flour salt sugar etc..if so how much would you suggest? What weight of dough +_equals large med small pizza?

Eugene shares the following:

Dear Albert,

I use both cornmeal and semolina flour in my pizza crust recipes.

In 1 1/2 cups of flour I substitute 3 tablespoons of semolina flour. For the cornmeal I usually substitute 2 tablespoons of cornmeal. It is very easy to add the tablespoons in the measuring cup first and then fill and rake with the flour and the substitution has been done.

4. Pre-Baking Crusts

Jean writes:

"Dear Albert,
I am in search of the secret for pre-baking then freezing my
pizza crusts for busy weekday meals. I have a wonderful husband and three great
kids who just love my homemade pizzas, thanks to your fabulous recipe
for the World's best pizza dough! I'm wondering if I can partially bake some
"personalize" pizza shells and freeze them so we could make quick
pizzas on those busy weeknights which include boy scouts, music lessons,
committee meetings, etc.

I so enjoy your fun website and have gotten such pleasure out
of making great pizzas at home!

My Response

Hello Jean.

Thank you very much for writing. You are asking a great question and I must say I do not have the answer to it.
I have made dough ahead of time and kept it in the firdge for a few days. I have frozen dough for up to several months, defrosted it and made pizza.
I have never pre-baked a pizza shell and tried to defrost it to make a pizza.

I usually don't have any dough left over when I make pizza.

If you do try this, please let me know how you make out.

5. "Pizza" The Movie, Update

I contacted Michael Dorian, filmmaker, about the status of  his latest film, Pizza, the movie. We first reported about this movie last year.

 I wrote: "Please update me on the movie release.
I want to let Pizza News readers in on the latest...
How has it going?"

Michael's response:

"Hi Albert,

Sorry for the tardy reply. I was out at Sundance. Although the movie
didn't play there, I did make some good contacts toward
distribution. I'm working on a few things right now; this is going to be a fairly
long process. Maybe. We'll see.

Release on DVD might be after a
theatrical distribution deal is secured. If that doesn't happen, I'll
likely use many different outlets for selling on DVD, but I'm
hoping I don't have to go that route, at least for now.
