While you can find pizza anywhere, the truly great pizza is made by those who have passion and understanding for the craft. Chef Billy Manzo is making not only great pizza but incredible pizza at Federal Hill Pizza, located in Providence, Rhode Island. He has taken his creations to a whole new level.
The menu of hand crafted pizza and other Italian dishes are simply delightful. You can discover a wide variety of pizza done with an understanding and sheer joy of creating memorable food. Chef Billy gives a nod to those mentors who have shown him the way but feels a need to elevate the tastes to another place of deliciousness.
Full disclosure here: Billy Manzo, is a dear friend who I have known for a number of years. He has the rare gift of being able to impart his love for pizza in each of his creations. Yes I am totally biased, and make no excuses for my strong opinion.
The pizzeria is located in the old Castle Theater where my mom saw films as a child. There is a rich history of memories from shared experiences of an era long gone. This was the home of Vaudeville shows traveling through the region. The transformation into a world class restaurant is nothing short of a miracle in itself.
If all you sampled were the appetizers you would be totally satisfied. From Sicilian Rice Balls to Bruchetta Pomodoro, from fried ravioli to our family favorite fried smelts. The appetizers are unique and well prepared. Of course, if you prefer pastas and salads you can discover them here.
The pizzas are simple yet delicate and flavorful There is the usual Margherita, as well as other specialty pizzas cooked in an imported wood fired oven. Actually there are two twin wood fired pizza ovens. Of particular note are the “Al Taglio” pizzas which is a variation of those enjoyed by Italian families for generations. These are cooked in metal pizza pans customized and created to impart a unique flavor and crispness.
There are many other things on the menu which can be sampled in addition to the pizza. The space is so different and unique you will greatly enjoy your dining experience. I was totally blown away during a tour of the restaurant. This was one of my absolute favorite places to enjoy my favorite food.
Of course I was able to get a tour and engaged in a great discussion with Billy. In the following video interview you will get a peek at the back of the house and watch first hand some of the inside story and pizza secrets with Billy. This was one of the funnest interviews I have ever done as I was being filmed as the pizza conversation took place. (I’m usually on the other end of the camera).
