1. The True Spirit of Pizza Therapy

I received an email from my good friend, Jaime the other day. We have known each other for years. I have made a few pizzas for her during that time. Now, her entire family makes their own pizza. She wanted to share her latest pizza adventure.

Making Pizza with the family...

Putting sauce on the pizza

Jaime writes:

"Albert,
My family - Grandpa, Grandpa, my sisters, my brothers, nieces, nephew, in-laws, husband, my two kids a some friends all had their hand in pizza and calzone making last night. There were 20 of us all together from age 1 - 74.

Master kamado Chef David had the kamado cooking up our pizza's and calzones just right. Here's some pictures of our "Pizza in Palisades Night".
Everyone just loved your recipe for the pizza crust!"

Cooking pizza on the kamado.

Cooking pizza on the "kamado".

The kamado is a unique ceramic grill, which traces it's history to ancient times. The kamado design was based on a clay vessel from Japan, called a Mushikamado. Originally this charcoal fired cooker was used to cook rice. This ceramic cooker was round and had a dome which could be taken off the base.

Airline pilot Richard Johnson, who was based in Japan, decided to turn this rice cooker into a barbecue. He redesigned the kamado and patented it. He opened a factory in Japan and produced thousands of these ceramic grills. The kamado is now produced in the United States. You can find out more about the kamado by visiting their website here: kamado.com Make sure you check all of the interesting links including the kamado forum.

Jaime insists the kamado is an incredible way to make pizza. Having a grill made of ceramic tile, I'm sure, makes a big difference in cooking pizza.

Thanks for sharing your family pizza adventures, Jaime. You all are the proof that Pizza Therapy is being practiced every time you get together to make pizza.

2. Pizza Therapy Dough Making Video Now on You Tube

For the last several months, I have been making videos.
I've made videos of restaurants, beaches, state fairs and museums. I have
even filmed a video of my search for Dog the Bounty Hunter.

You can learn how to make a haku lei, visit the North Shore Soap Factoryor go with me to Abbots in Noank, Connecticut for some lobster.

You can see some of these videos at my website Hawaii Secret Dot Com and at my Associated Content Page. (Please check out both of these resources)

It was only a matter of time before I started making pizza videos.

Here is my latest pizza video. The last time I made pizza dough I decided to film it. I uploaded it to You Tube. This video may take a couple of seconds to load on the page.

It's called: Learn how to make Pizza Dough from Pizza Therapy:

From The Pizza News Archives
December 2000, (Volume 1 No. 12)
Espo Reports on the state of Pizza in Peru:

"We had a most amazing trip to Peru and it was very interesting to see so
many pizza places. In Cusco, the ancient capital of the Incan empire, in
the environs of the Plaza de Armas there are many pizzerias. We chose one
called Chez Magy. We had a choice of red or white pizza with cheese and
there was a wide selection  of toppings. The pizza was baked in a clay wood fired oven.

What made the pizza special was that it was baked in clay, wood fired ovens. Chez Magy also has a place in Agua Caliente, the villagebelow the Lost City of Machu Picchu.

Both places made a good pie and thelocal brew Cusqueno beer made an excellent
compliment to the pizza. The crusts were fresh, thin and crispy and the toppings were all fresh.

Although we did not check out other pizzerias, choosing to sample the
regional cuisine. We did look and they all used the wood fired, dome shaped clay ovens."

Thanks for the report, Espo. I wonder if those dome shaped clay ovens are at all related to the kamado and Mushikamado.

Hmmm...didn't Peru have a prime minister of Japanese descent?

Finally, I want to invite you to please check out my latest website.
